4 Phyllo pastry sheets

2 tb Butter, melted

------------------------------MUSHROOM FILLING------------------------------ 1 tb Butter

1 lb Mushrooms, finely chopped

1 tb Light soy sauce

1 Garlic clove, minced

1 pn Nutmeg

3 Green onions, minced

2 tb Toasted walnuts, fine chop

2 tb Light mayonnaise

1 pn Salt

1/4 ts Pepper

Mushroom Filling: In nonstick skillet, melt butter over medium heat; cook mushrooms, soy sauce, garlic and nutmet, stirring, for about 7 minutes or until liquid is absorbed. Stir in onions and walnuts. Blend in mayonnaise. Season with salt and pepper to taste. Place 1 sheet of phyllo pastry on work surface, keeping remaining sheets covered withdamp cloth. Brush with butter. Lay second sheet of phyllo over top; brush with buter. Repeat with remaining sheets. Cut crosswise into fifths and lengthwise in thirds to make 30 squares total. Press each 4-layer square into nonstick 1-inch tart tin. Bake in 350F 180C oven for 10 minutes or until golden brown. Spoon filling into

400 g Flour

3 Eggs

120 g Butter

100 g And 300g sugar

1 kg Apple or pear

Cream butter and 300g sugar then add eggs, flour and sugar. Bake in a base (preferably a cast iron pan), at 180C for 20-30 mins. Test with a skewer. Peel apple or pear and core. Slice, then cover the base. Sprinkle sugar over and bake till the applepear is soft and a golden brown colour. To serve, place a plate over the baking pan and tip upside down. 100% Whole Wheat Bread

2/3 c Water

3 pk Yeast

1 tb Sugar

8 c Scalded Milk

2/3 c Shortening

1 c Sugar

1/2 c Molasses

2 tb Salt

12 c Whole Wheat Flour

Dissolve yeast in 2/3 c water while your milk is cooling. Dissolve 1 cup sugar in the hot milk. Stir all ingredients in large bowl, turn out and knead about 5 minutes, adding flour if needed. Knead about 5 minutes. Let rise until doubled in bulk, about 1 1/2

to 2 hours. Knead down and shape into 6 loaves, let rise until doubled in pans. Bake at 375 degrees F. for 40 minutes. Turn out on wire rack and let cool to cold before slicing, if you can. NOTE: Raisins and/or walnuts can be added for a change. Also this bread freezes well. -----

Rice - Sweet and Sour Aubergines (Yam Makhua Phao)

Stephen Ceideburg 4 Aubergines (eggplants)

3 Shallots, chopped

3 tb Fish sauce

3 tb Lemon juice

4 tb Sugar

----------------------------------GARNISH---------------------------------- 10 Coriander leaves

4 tb Powdered dried shrimp

Cook the aubergines whole in a hot oven (230 degrees C/450 degrees F/Gas Mark 8) or barbecue them directly over strong heat until the skins are burnt. Toss the aubergines into cold water, then peel and dice. Place the pieces in a serving dish and stir in the chopped shal- lot. Mix the fish sauce, lemon juice and sugar in a pan and bring to the boil. Pour over the aubergines. Serve sprinkled with coriander leaves and powdered shrimp. 1 c Raisins

1 c Water

2 Eggs; beaten

1 ts Vanilla

1 c Flour

1/4 c Dates; chopped

1/2 c Shortening

3 ts Sweetener

1 ts Soda

Boil raisins, dates and water for 3 minutes. Add shortening and cool. Add eggs, then all remaining ingredients and mix well. Chill. Drop onto ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. -----
